Have you tried our dry aged meats?

We age and hand cut every piece to order, and we now have a new dry ageing room. The dry ageing room is basically a refrigerator that is purpose built to age beef in the perfect climate with the correct temperature, humidity and ventilation.

In order to dry age properly, the temperature needs to be specifically within a very small window. The humidity needs to be between 80% - 85% at a constant level, to evaporate the water and produce the perfect flavour. A good ventilation system keeps oxygen circulating so the meat can oxidise, which is essential to keep it fresh and clean.

VEGETABLES AND CONDIMENTS

We stock all the condiments and accompaniments you’d ever need, from meat rubs and sauces through to honey, relishes, jams and dressings. Shop all the ingredients for a complete meal as we also sell fresh seasonal vegetables, milk, eggs and bread. Just check our fridge for what’s in season.

Now there’s no need for an extra trip to the supermarket when you forgot to buy broccoli and potatoes to go with your steak - you can get it all at Bourke Street Butchery!
