Our Farmers

We believe integrity of product to be one of the most important things at Bourke St Butchery. By being a paddock to plate butcher, we are committed to supporting local farmers, we only buy from the best farmers with superior herds and the most ethical & sustainable farming practices    

We source our meat carefully. We've identified and worked with local farmers to put in place a consistent supply of beef, lamb, pork, chicken and goat, which includes a relationship with 1 certified organic farmer; and two free range producers of pork and chicken. We've worked with our farmers to develop a specification and we are able to quickly provide them with feedback when something goes wrong. By sourcing locally, we've greater control on the meat that we buy and supply.

 
Our Beef Farmers

All of all our steers are raised naturally in the open pasture of local farmers. Animals are treated with the utmost care, using humane animal welfare practices. Bourke St Butchery collaborates with the best local farmers to deliver the best, most flavourful beef.

We source our beef from two main suppliers: Jim Rose, from Roseborough at Rawsonville and Rosalea, located in Wellington. Both are grassfed, with Evan from Rosalea, finishing his cattle on fodder.....they are thoroughly spoilt!

Jim’s cattle are raised on rich grasses located on the Macquarie River. A beef farming family for many geerations, Roseborough has been supplying their grass fed beef to Bourke St Butchery for many years.

We also obtain certified organic beef from Gundooee Organics, located 1 hour north of Mudgee. Gundooee Organics produce a premium, certified organic Wagyu, raised on deep-rooted, native perennial grasses incorporating ethical and ecologically regenerative farming technics.

Gundooee Organics, is a thriving, innovative family farming business whose goal is to regenerate the ecological health of the land, and produce a unique quality product to be enjoyed by all Australians.

 

Our Chicken Farmer

Carbeen Pastured Produce is a family owned farming business located in Manildra in Central Western New South Wales.

Carbeen Pasture Produce is known for its holistic management principles as well as utilising other environmentally enhancing agricultural practices. This means that their farming practices are "beyond organic", focusing on enhancing the environment and the greatest level of animal welfare

Bourke St Butchery sources our chickens and eggs from Carbeen Pasture Produce, because they are “local” and their chickens are true free rangers – not a fence in site and produce chicken the way it is meant to taste.

 

Our Lamb Farmer

Our lamb is sourced from Outback Lamb a family farm, located in Tullamore. 

Outback Lamb is a family farm and together as a family they proudly care for each of their animals. Fiona and her family lives on the property called "Westpoint" and their livestock spend their whole lives on both native and improved pastures rich in minerals and nutrients with plenty of sunshine and fresh air.

Welfare, best practice management, uncompromising specifications, attention to detail and quantitative measures throughout the supply chain underpin the Outback Lamb brand.  High standards of animal health and systems are essential in order to produce a premium lamb brand.

 

Our Goat Farmer

Our goat is supplied by The Gourmet Goat Lady.

The goat is grown on ‘Buena Vista’, located in Central Western NSW and managed by a farming family with over 100 years history in the district. 

The goats farmed are Boer goats, originally from South Africa, a specialist goatmeat breed. The goats are pasture-raised, live a stress free, healthy outdoor life and graze and socialise naturally as part of a herd.

Farmed goatmeat is tender, juicy, mild in flavor and easy to cook. A staple in many cuisines including Italian, Greek, African, Middle Eastern, North African, Indian, Pakistani, Mexican, and Caribbean, goatmeat can be prepared and cooked in countless ways. Similar to quality lamb and beef, depending on the cut, farmed goatmeat it can be prepared by grilling, rotisserie, broiling, roasting, sautéing, pan-frying, braising and stewing.

 
Our Pork Farmer

Our pork is supplied by Murray Valley with most of our pork coming from Borrowdale Free Range Pork (subject to season and availability) located near Goondiwindi, in South Queensland.
